HONEY YELLOW Processing Method – Made from fully ripe coffee cherries with naturally high sweetness, selected at peak quality for processing. After being thoroughly washed, the beans are depulped, leaving about 15%–50% of the mucilage intact.
Following pH monitoring, the beans are sun-dried on raised beds under controlled temperature conditions for about 15–20 days.
Cupping Profile: Chocolate, nutty, slightly fruity, honey, biscuit, spicy — clean and sweet aftertaste, smooth mouthfeel, and well-balanced flavor.
