BLACK HONEY Processing Method – Made from fully ripe coffee cherries with high natural sweetness, selected at optimal quality for processing. After being thoroughly washed and depulped, the beans undergo anaerobic fermentation (fermentation without oxygen).
Once the pH level is properly measured, the beans are sun-dried on raised beds under controlled temperature conditions for about 15–20 days.
Cupping Profile: Nutty almond, dark chocolate, spicy herbal, malt — sweet aftertaste, smooth mouthfeel, and well-balanced flavor.
